Spanish Sauce with Capers
Good friends of ours from Aptos, CA shared this recipe with us; they eat it with eggs. We have served it on baked, fresh Alaskan Halibut and it is so delicious!
1 cup finely chopped onion
1 cup chopped green pepper
1 chopped jalipino
3 cloves crushed garlic
1/4 cup butter
1 1/2 large can (28oz) tomatoes
1 3-4 ounce jar capers
1/2 lb sliced mushrooms
salt, cayenne pepper to taste
Cook onion, garlic, and green pepper in butter until soft. Add tomatoes, cooking until liquid has nearly evaporated. Add mushrooms, seasoning, and capers. Thanks Bill and Terry!
